The Inspiration Behind the Mala Cake
The Mala Cake was inspired by De Taste’s founder/patissier, Gao Min, a native of Shan Dong, where love for bold, spicy flavours runs deep. “Mala has always been a part of my life, long before it became a trend. I wanted to take that love for spice and bring it into the world of cakes, creating something truly unique,” says Gao Min.
Truly a culinary adventure, the Mala Cake is meticulously crafted to balance spice, sweetness, and texture. The top layer, made from fresh pumpkin purée, adds a rich, buttery taste without overwhelming sweetness. The pumpkins are carefully tested and adjusted for consistency in sweetness, ensuring each batch delivers a uniform experience.
Beneath the pumpkin layer lies the heart of the flavour – the Mala Cream, a slightly salty base infused with the essence of Sichuan peppercorns and chilli, creating a bold and intriguing contrast. The Szechuan chilli powder and ground sesame seeds are carefully roasted, enhancing their aroma while taming the heat to keep the cake from becoming overwhelmingly spicy or numbing.
Encapsulating all this heat is a layer of chocolate crunch that envelops the roasted chilli and sesame, providing a delightful crunch with rice krispies for added texture. This adds depth without overpowering the Mala cream, creating a harmonious balance of flavours and a pleasant crispness. The result?
